The Morat family has owned vineyard land in southern Burgundy’s Maconnais region for decades, but it was not until 1997 that Gilles, representing the third generation, founded his eponymous domaine. His father and grandfather had previously worked the vineyards, but always sold the harvest to others. Now, Gilles (along with his wife Joelle and son Pierre) diligently farms his 15 acres of certified organic, old-vine chardonnay to produce his own label. His precision winemaking technique focuses on purity, balance and elegance. Two-thirds of this cuvee ferments in stainless steel while the remaining one-third is put in neutral French oak; both components then age with the lees for about eight months. The result is eye-opening elegant, supple yet crisp and vibrant, carrying notes of apple, quince, pear and ginger. (Gary)
