The exceptionally fine and elegant nature of the wines from this 100-year old cooperative are the product of exquisite winemaking techniques and some of the finest soil known to the winemaking world. Located on both sides of the petite and incredibly picturesque Serein river in Chablis, the vineyards sink their roots into the most prestigious limestone-rich ridge on the planet, known to geologists and winemakers alike as the Kimmeridgean ledge. Millions of years ago Europe was covered by an ocean whose enormous deposits of tiny comma-shaped oyster fossils (ostrea virgula) fill the sedimentary layer under the region of Chablis (which also visibly reappears on the English coast and is known as the "White Cliffs of Dover.") Due to the nature of its incredible calcium-rich soil, this wine displays brilliantly gem-like characteristics of crisp clean honeydew melon, tart apple, quince, camellia, and white tea. There is arguably no better wine pairing for poultry, cheese, or fish dishes than Chablis. (Jenny)
