For more than twenty years, Elk Cove has been a frequent feature at Spiritus. Pat and Joe Campbell are icons in Oregon's winemaking history, founding their flagship winery in 1974 and passing the tradition on to son Adam. Adam now oversees 380 planted acres producing estate-grown, cool-climate, hand-crafted wines that rival the best in the world. This pinot noir blends fruit from six estate vineyards and ages for ten months in French oak producing a very approachable, plush wine with notes of ripe cherry, plum, raspberry, clove and allspice. Grill a whole side of salmon to pair with a bottle and you’ll be transported to the Pacific Northwest. Wine Spectator, 92 points. (Gary)
