Founded in 1840 by a former master barrel maker, Simonnet-Febvre is one of the oldest of the traditional Chablis domaines with vineyards surrounding the town, and to the southeast in the côteaux de l'Auxois, upon which this deliciously authentic chardonnay is cultivated. The vines are trellised in a lyre shape and entirely worked and harvested by hand. Deeply aromatic with notes of may blossom, white lily, hawthorne, crisp pink lady apple, lemon zest, muted toast, and subtle vanilla bean, this chardonnay is perfect with white bean soup, chicken tarragon, honey-rubbed ham, and green bean casserole.
