The Nivarius is an unusual white Rioja made from the rare tempranillo blanco grape (instead of viura) grown at an elevation of over 2100 feet. The combination of terroir and steel tank aging time finished in French oak barrels creates a fresh and perfectly ripe wine that is wildly interesting with a medium body and long finish. This white Rioja shows notes of white stone fruit, green plum, white tea, and lively stoniness. The high altitude vineyards guarantee slower, more delicate ripening, unusual in central northern Spain. Try this with manchego, hard Spanish sausages and tortas, or braised pork with white beans and thyme. (Jenny)
