Though the McLaren Vale’s microclimate presents as slightly warmer, drier, and less maritime than that of Bordeaux, the winery's flagship cabernet is indicative of the varietal with a generous dollop of Aussie swagger. This red is intense, dark, exotic, with firm tannins and masculine expression, while still exhibiting suppleness and poise. The aromas are effusive with roasted chestnuts, sandalwood, cinnamon, lead pencil, dried herbs, softly fragrant paprika, olives, and a hint of rosebuds. Rich brambly fruit will pair fantastically with sauteed mixed wild mushrooms or bacon, lettuce and tomato sandwiches with a garlic aioli. (Jenny)
