The Tokaj region of Hungary is synonymous with some of the world’s greatest dessert wines, a declared UNESCO World Heritage site, and sports the world’s most ancient wine classification system which predates Bordeaux and Porto. Evolucio is not a sweet wine, but it still retains some Tokaj swagger with hints of ripe peach and nectarine underneath its crisp, steely, floral attack. The wine is bottled young to retain freshness and will pair nicely with goat cheese, chicken and shrimp curry, or anything spicy in coconut sauce. (Jenny)
