Glacial moraines and ancient seabed soils provide the perfect mineral loam and sand for the cultivation of white wines which form the pride and joy of the Alto Adige, the northernmost province of Italy once ruled by the Austrians. From this pristine environment comes this pinot bianco of Elena Walch, showcasing the crisp, mineral side of the grape. Redolent of light apple and fresh sage while displaying a well-balanced smoothness underlain by stony acidity. Her unoaked, vibrant pinot bianco expresses itself best with seafood, a crumbling chunk of parmigiano reggiano or rotisserie chicken. (Jenny)
