Spread along the banks of the Loire river two hours south of Paris lie the vineyards of Alain Cailbourdin's love letter to the sauvignon blanc grape. Situated in an ideal microclimate on limestone rock facing south-west, his whites represent the perfect alternative to the now sometimes impossible-to-find Sancerre appellation. His wine is well-structured with luxurious notes of acacia and hawthorne, white truffle and quince, or apricot and white peach, along with excellent minerality and a typical varietal hint of flint. White meat with creamy morel mushroom sauce and goat cheese salad would pair nicely. (Jenny)
